Food Safety and HACCP Readiness Expert

About the role

The project‑based assignment supports Milimani Enterprises Ltd, a women‑owned bakery‑ingredients manufacturer in Kigali, to achieve HACCP certification. The expert will assess current food‑safety practices, close gaps, and guide the company through certification readiness.

Key responsibilities

• Review licences, SOPs, production, cleaning, pest‑control, staff hygiene, supplier and batch records, traceability and complaint documentation.
• Conduct on‑site gap assessment of raw‑material receipt, storage, processing, packaging, labeling, dispatch, sanitation, allergen control and recall readiness.
• Assess compliance with HACCP, GMP/GHP, ISO 22000/FSSC 22000 and related prerequisite programmes.
• Prepare a risk‑rated HACCP/food‑safety gap report with prioritized corrective actions, responsibilities and timelines.
• Support HACCP scope definition, hazard analysis, identification of critical control points and development of SOPs, checklists and templates.
• Deliver in‑person training to the HACCP team and operational staff on implementation, documentation, monitoring and audit expectations.
• Provide follow‑up support, conduct a mock audit, assist with certification application, audit file preparation and closure of non‑conformities.

Required profile

• University degree or advanced qualification in food science, food technology, microbiology, quality management or related field.
• Professional HACCP implementation/auditing certification; ISO 22000, FSSC 22000 or GMP/GHP training is a strong asset.
• Minimum 8 years of food‑safety/quality assurance experience, including at least 5 years of hands‑on HACCP implementation for food manufacturers.
• Experience in bakery or food‑ingredients processing and familiarity with Rwanda’s regulatory environment is preferred.
• Excellent English; Kinyarwanda is an asset for shop‑floor training.
