About the role
The Cluster Hygiene Manager ensures that all food and beverage operations at the Kigali Marriott Hotel meet Marriott International’s hygiene and food safety standards. You will lead compliance audits, train staff on proper food handling, and act as the primary liaison for food safety inquiries.
Key responsibilities
- Verify compliance with Brand Standard Audit (BSA) requirements across all F&B outlets.
- Conduct daily kitchen inspections covering personal hygiene, environmental conditions, and equipment integrity.
- Identify risk areas and implement pre‑emptive corrective actions.
- Provide in‑house food hygiene training for new hires and ongoing refresher sessions.
- Handle customer and regulatory complaints related to food safety.
- Coordinate vendor inspections and collaborate with purchasing and culinary leadership.
- Manage pest‑control contracts and monitor performance.
- Maintain documentation of all hygiene and food safety standards.
Required profile
- High school diploma or GED with at least 2 years of experience in food & beverage, culinary, or related fields, OR a 2‑year degree in Hotel & Restaurant Management, Hospitality, Business Administration, or a related discipline.
- Preferred education: Environmental Health or Culinary degree.
Required skills
- Food safety compliance (Brand Standard Audit, local regulations).
- Product labeling knowledge for government requirements.
- Conducting and documenting hygiene inspections.
- Training and coaching food handlers.
